In cooking and preparing these recipes and writing this book, Collette is hoping to reach out to others who may be feeling overwhelmed, frustrated, bored and hungry with their diet, like she was only a few years ago.
This book is not just for those with food allergies. It is for those of us who choose to eat healthily, perhaps to lose or maintain weight and for those who want to care for their bodies, starting from the inside. Collette has maintained a rapid 18kg weight loss initially generated through an elimination diet without any exercise. Through this process along with extensive research and visits to specialists, she has discovered the foods she can eat. She now eats this food daily - Collette had no choice (she has countless food allergies) but she can honestly say, if she did have a choice she would continue to eat as such, as she has never felt so alive, energetic and healthy.
Collette has a new passion for healthy and exciting food, not just for herself but also because she knows she is bringing up her two daughters up to appreciate healthy foods. With childhood obesity increasing at such a rapid rate, she believe it’s even more important for us to prevent fast foods from taking over our lives. It's more important than ever to "cut out the crap" and get back to basic, healthy and tasty eating.
Each and every recipe in this book is Gluten, Dairy and Preservative free. All of these recipes have been tested several times by Collette, her husband and her two young daughters. (Not to mention many willing friends). These recipes are what we eat every day and night.
Every recipe is easy to make. You won’t have to spend hours slaving in the kitchen. You won’t need to run all over town to find strange ingredients - all can be found in your local supermarket, health food store and fruit and vegie store.
And as Collette knows what it’s like to run a household on a budget, all of these recipes are affordable to have every night.
Being told you have an allergy or intolerance can be a scary thing. Not knowing what to eat results in many people cooking two evening meals. You won’t need to do this anymore, as these are recipes the whole family will enjoy. What a wonderful feeling it will be to have your whole family sitting around the dinner table, enjoying a tasty meal together, and knowing that your body won't punish you for it.

Having will power is one necessity. The other is having the information on hand to help you each step of the way on a daily basis. Food allergies and intolerances are becoming more and more common in todays society. Not often do you speak with someone who doesn’t have a family member or a friend with a food related health issue.
For what reason all of this is happening, Collette is unsure. Have food allergies and intolerances always been so common, or were we just not aware or medically advanced enough to do all the testing? Or is it that over the last 20 years or more we are increasingly filling our bodies with unnecessary chemicals and our bodies are fighting back and the signs of this are starting to show. Collette doesn't know. Collette doesn't believe she is meant to know the answer. She is not a doctor or a medical professional of any kind. She is simply a person, a wife, daughter and mother who has been told by her body that “enough is enough”.
Collette recalls getting what I call “bowel attacks“ from about 13 years old. She would have on average, about one per year. A “bowel attack” would hit her suddenly and nearly always of a night. She had major IBS symptoms and she would often throw up, pass out and just cry her eyes out as the pain was so intolerable. The longest bowel attack lasted for 6 long hours, and after having two 8pd babies naturally, she can honestly say the pains, spasms and cramps compare with those of late stage labour pains.
Her attacks started getting more frequent. One every 6 months, 3 months, monthly and in her late 20’s, every 2nd night.
She couldn’t stand to live like this anymore, so her casual journey of seeking an answer suddenly turned serious.
Collette went to a bowel specialist who did every test possible, including one where she had to drink a McDonalds thickshake to see if she was dairy intolerant! He ended up telling her she was “just constipated” and nothing was wrong with her as she “looked fine”.
Collette spent days in hospital to have many more tests done only to be sent home with chemical filled laxatives. No one seemed to be listening. She knew that she wasn’t “just constipated”.
Collette then went to an allergist who told her that she was coeliac (through blood tests) and she had a large amount of varying food allergies (through skin prick tests). Through the allergist, she did a typical Elimination diet. The diet was meant to take 1 month. It took 4. Collette lost 18kg. On a positive note, she was no longer having “bowel attacks” but she was constantly tired and felt run down and didn’t feel even the slightest bit healthy. Her diet consisted of chicken (no skin), white fish, pears, apples (no skin), potato, cabbage, rice, rice milk and rice bubbles. Oh, and 4 white jelly beans and white marshmallows a day! Was there any wonder after eating this way for 7 months that she still felt like crap!
Collete had been told of a Naturopath (Catherine Chan) who was a fertility specialist. She made an appointment thinking if she can make babies, then surely she can help her bowel!
Her reaction on Collette's initial consultation was pure shock of what she had been eating; Collette's reaction was a mass of tears and relief when she told me Collette she could help her.
Catherine started by putting Collette onto a Blood group diet (except for the foods that she would majorly react to) as well as some herb tonics. Within 2 weeks of seeing her Collette felt amazing and healthy. Her body was finally alive for the first time in so long.
Catherine sent me Collette to the Blue Mountains for 3 colonic irrigations. As crazy as it sounds this is when Collette decided to write this book. Annette told Collette something during one of her treatments that literally changed her way of thinking and her life. It is something that Collette will always remember.
“In life we are all dealt obstacles; strong people see the obstacles and somehow manage to get over them. Most, simply stop there. What you have to do Collette is do something with the knowledge you have gained whilst getting over your obstacle, then run with it, it will change your life”
Collette's immediate and not so confident answer to her was “well maybe I could write a recipe book” (!!)
And here she is. For the last 2 years Collette has committed herself to creating these recipes. It has been a long journey with ups and downs, laughter and tears, and cooking successes and some horrible failures! Collette am so excited to be able to share these beautiful recipes with you.
